Anzac Biscuits

Last week on 25 April we commemorated Anzac Day.

In World War I a lot of New Zealand and Australian men fought because they believed in a "free world". Many fathers, brothers and uncles lost their lives during this war.

We learnt that the soldiers who fought in a battle which took place in Gallipoli, Turkey were called the ANZACs. This was short for the Australian and New Zealand Army Corps.

At war, the soldiers led a very hard life. For food, they ate hard, tasteless biscuits and canned corned beef. The families at home would occasionally send biscuits to the soldiers as a treat. It took a long time for these biscuits to get to the soldiers so the biscuits had to last for weeks and not spoil. Thus the recipe for Anzac biscuits was devised. A recipe that called for the ingredients of oats and coconut and no eggs combining to create a biscuit that could last longer than normal biscuits.

Today Anzac biscuits are one of the things that remind us of the brave ANZAC soldiers who fought for our right to freedom so many years ago. They also remind us to think of all the other soldiers who have fought for us over the years in World War II and in other wars around the world.

Here we are making and eating our Anzac biscuits.
